Venison class teaches safety and cooking

As the deer firearms season quickly approaches, thousands of hopeful hunters are preparing for what will hopefully be a bountiful harvest.

Many are beginning to go through the usual checklist of scouting out the favorite hunting location, checking trail cameras, and sighting in the favorite deer rifle. There is one more item to add to your checklist this year and that is the Venison 101 Training.

Venison 101 is a workshop that will take you step by step from that final shot to enjoying that fine venison on the dinner table.

The workshop will be offered Nov. 12 from 6 to 9 p.m. at the Heart and Hand Market in Philippi. The cost is free but pre-registration is required for the course. Participants must contact the Barbour County WVU Extension Office. For more information or to register, call 304-457-3254.

Various topics to be covered include: proper field dressing techniques, meat processing and identifying cuts of meats to meet your dinner plans, as well as food safety and proper canning techniques. This will be a hands-on learning experience so come prepared to get a bit dirty.

The training will include a presentation from the DNR on whitetail management strategies and herd health in the Mountain State. This will cover current management strategies being used in West Virginia and will also take a look at some of the health issues that our deer herd can face.
