Chef Derrick Helzer slices gravlox of salmon for students in the Davis & Elkins Community Education St. Patty’s Cooking class. During the two-day session in Halliehurst kitchen, participants learned to make corned beef and gavlox of salmon from scratch and prepared Irish bacon, colcannon with kale and leeks, Irish soda bread, Guinness boiled potatoes and cabbage, and sweetened Guinness and strawberries. Helzer, a D&E alumnus who has worked as a chef at the Greenbrier, will instruct a Community Education class beginning April 1 in which students will learn to prepare an Easter dinner.
