Canning classes to be offered at Camp Pioneer

BEVERLY -- Many local residents are looking forward to gardening season, planting seeds and growing their own food this summer. For those interested in preserving that food, or culinary treasures found at farmer's markets, to enjoy throughout next winter, classes in canning are being offered in Randolph County.

The WVU Randolph County Extension Service is providing help in answering food preservation questions, including offering classes on the subject.

The classes are offered for those interested in learning to preserve your garden's bounty, or who just need a refresher course in how to preserve your foods.

"Research on the safety of home canned goods is constantly evolving and recipes published prior to 2006 are generally considered out-of-date," an Extension Service press release state. "This means 'grandma's recipes' or 'the way it's always been done' may not be safe."

The sessions will focus on both water-bath canning and pressure canning. A two-day class will be offered Monday, May 6 and Tuesday, May 7. The classes will take place at 4-H Camp Pioneer in Beverly.

The two-day class will be offered from 1-4 p.m. and 5-8 p.m.

Topics to be covered during the classes include:

∫ Water-Bath Canning: Learning the basics of up-to-date food preservation techniques and safe preservation methods. Participants will can "acid products" such as jam, salsa or pickles and take home items canned.

∫ Pressure Canning: Learn the basics of up-to-date food preservation techniques and safe preservation methods. Participants will can low-acid products such as green beans, other vegetables, beans, or meat and also learn basics of drying or freezing. Participants will take home items prepared.

Pre-registration for the classes is required on or before May 2 by calling 304-636-2455. Space is limited, so those interested are advised to call early.

There is a cost to take part, to cover the price of ingredients for the two-day class.
