WVU Extension offers food preservation classes

As home canning safety guidelines continue to evolve, older methods and recipes – especially those published before 2016 – may not meet current safety standards. To help local residents preserve food safely, the WVU Randolph County Extension Service is offering hands-on food preservation classes this May.

The two-day class will cover both water-bath canning and pressure canning, providing participants with up-to-date techniques for safely preserving a variety of foods.

The classes will be offered Monday, May 4 and Tuesday, May 5 from 1-4 p.m. or 5-8 p.m. at 4-H Camp Pioneer in Beverly. There will be a cost per person for the classes.

The registration ceadline will be Friday, May 1. Please call 304-636-2455 to register.

During the course, participants will learn safe food preservation methods, can acid foods such as jams, salsas, or pickles, and pressure can low-acid foods like vegetables, beans, or meats. Additional guidance on food drying and freezing will also be provided.

Pre-registration is required, and space is limited. Those interested should call 304-636-2455 early to secure a spot.
